The Modern Butcher opened in Newburyport in 2019, where its Saturday Beef Drop made the Three-Way a cult favorite. Owners Lisa and Craig “Nelly” Nelson use top round, sous-vided for at least 16 hours, then finished and hand-sliced for that melt-in-your-mouth bite. In 2023 the shop moved to Danvers, where the Saturday tradition still draws long lines.

Arrive before 11 AM on Saturday if you want a Three-Way. They turn out about 300, limit orders to four per person, and sell out fast.
